For most existing pools and many new pools with irregular shapes, you'll want to use the universal track system.

With this system, low-profile tracks run close to the edge of the pool along the top of the deck, and the cover mechanism can be housed either underground (recessed, as in the left picture) or on top of the deck in an attractive bench housing (right picture).
